GLUTEN FREE TRIPLE-LAYER PARTY CAKE
This delicious chocolate triple-layer cake is the perfect gluten free dessert for any party, holiday, or special occasion. I'm using a classic buttercream frosting here but feel free to use whatever your favorite frosting is! Make the curls the day before just to keep things easy. Who says gluten free can't be amazing?!

WALK ME THROUGH IT...
FIRST, MAKE THE CAKES
STEP 1
Getting Ready: Prepare three 8-inch cake pans (spray bottom only). Preheat oven to 350 ̊. Set out a cake plate (one with a cover is best). Let's Get Started: To a large mixing bowl, add white rice flour, potato starch, tapioca flour, baking powder, baking soda, salt, and xanthan gum.

STEP 2
Whisk together.

NEXT, MAKE THE FROSTING
PUTTING IT ALL TOGETHER
STEP 25
Frost carefully, and try not to get too many crumbs into the frosting. If you have time, first do a "crumb coat". This is a thin first coat to catch up all the crumbs. Refrigerate it until frosting is firm, then frost with the "real" top layer of frosting. Because of the protective crumb coat, the top layer will not have any crumbs!

STEP 26
For the sake of time, I didn't do a crumb coat this time (shame on me)...see my crumbs? :( Fortunately, the curls will cover up most of them!

FINALLY, ADD ON THE CURLS
Use as many or as few curls as you like. Place curls in a random pattern and at different angles to create a small mound. Get creative!
