Gluten Free Roasted Red Potatoes

These deliciously seasoned, naturally gluten free roasted potatoes are super simple to make. I’ve added bell pepper and onion for variety of flavors, but you can definitely make it without them if you prefer. This delicious side dish is a gluten free staple in our house…I hope you enjoy it too!

Getting Ready: Wash potatoes, peppers, and parsley. Dry the parsley with a clean tea towel or paper towels. Spray a baking sheet with gluten free non-stick cooking spray. Set out a large mixing bowl of cold water. Preheat oven to 425°.

To slice the potatoes evenly, start by slicing lengthwise.

Next, cut each half into 6 pieces by cutting in an x pattern, then across horizontally.

Place all potatoes into the cold water as you cut them up, and let sit for 1 hour.

Cut peppers into strips and set aside.

Cut onion into strips and set aside.

Make sure that you have selected flat-leaf parsley, not curly.

To remove leaves, angle a sharp knife downward toward the leafy end of the bunch.

Repeatedly shave downward, rotating the bunch, until all leaves are off.

Mince the parsley.

After one hour, drain the water out of the bowl and rinse potatoes. Drain again and leave potatoes in bowl.​

Drizzle on the olive oil and mix to coat all potatoes.

In small bowl, mix together the salt, pepper, and garlic powder. ​Sprinkle the seasonings on potatoes, a little at a time, mixing potatoes as you go.

Thoroughly mix around the potatoes until all are evenly coated.

Put potatoes onto a baking sheet, single layer.

Bake potatoes by themselves for 20 minutes.

Remove from oven and turn over all potatoes.

Now, add the onions,

and the peppers...

and return to oven for 20 more minutes, or until potatoes are golden and tender (or a little longer if that's your preference).

When potatoes are done, remove from oven.

They should be golden and slightly crisp on the outside.

Sprinkle with parsley, and gently mix together with spatula.

Transfer to a serving dish.

Yay! Time to eat!

Serve hot and watch them disappear!!

3 lbs. red potatoes
2 Tbsp. extra virgin olive oil
2 tsp. salt
½ tsp. black pepper
2 ½ tsp. garlic powder

2 bell peppers (1 red/1 green)
1 small white onion

  2. Cut peppers and onion into strips. Set aside.

  3. Mince the parsley. Set aside.

  5. After one hour, drain the water out of the bowl and rinse potatoes. Drain again and leave potatoes in bowl.
