Gluten Free Mint M&M Chocolate Cookies

Soft chocolate cookies with mint M&Ms. Perfect for Christmas! Change it up with any gluten free addition like nuts, peanut butter chips, etc. The delicious possibilities are endless!

In a medium mixing bowl, whisk or stir together flour, cocoa powder, salt, baking soda, and xanthan gum. Set aside.

To a large mixing bowl, add the butter, brown sugar, granulated sugar, and vanilla.

Start mixing on low speed until combined,

then increase speed and cream together until fluffy.

Add eggs.

Mix well.

Continue until dough is fluffy and lighter in color.

Mix dry ingredients into wet ingredients 1/3 at a time.

Mix between each addition. ​

Your dough should look like this when you are done mixing.

Split dough in half if you would like to do two different types of cookies.

Add your gluten free "add-ins". Today I'm adding in mint M&Ms.

Stir by hand to mix in.

Use a small scooper to create even-sized dough balls.

Evenly space dough on your parchment-lined cookie sheet.

Top with a few M&Ms.

Bake for about 11-13 minutes.

Let cookies cool slightly on cookie sheet before moving to wire rack. Be careful...they'll be soft until they cool!

Both of these cookies were made from the same batch of dough. I made mint M&M cookies and double chocolate chip cookies with walnuts.

The Recipe:

GLUTEN FREE MINT M&M CHOCOLATE COOKIES

* IMPORTANT…When measuring out your flours, DO NOT scoop your measuring cup into a tub or bag. This will result in using more flour than called for. Instead, pour or spoon the flour into your measuring cup, and level off with flat side of a knife. If possible, measure your flours by weight for best accuracy.

INGREDIENTS

Dry Ingredients

2 cups gluten free flour mix (see below)
2/3 cup cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. xanthan gum

Wet Ingredients
1 cup butter, softened
1 cup dark brown sugar
1/2 cup granulated sugar
1 tsp. vanilla
2 large eggs

Add-Ins
1 cup mint M&Ms + enough more to top cookies

Other
cookie sheet
parchment paper
­­small scooper

DIRECTIONS

Getting Ready: 

  1. Preheat oven to 350 ̊

  2. Line cookie sheet with parchment paper


​Let’s Get Started:

  1. In medium-sized mixing bowl, whisk or stir together flour, cocoa powder, salt, baking soda, and xanthan gum. Set aside.

  2. In large mixing bowl, cream together butter, brown sugar, granulated sugar, and vanilla.

  3. Add eggs and mix well.

  4. Mix dry ingredients into wet ingredients 1/3 at a time, mixing between each addition.

  5. Stir in M&Ms, or any other gluten free additions that you like. (Peanut butter chips, nuts, etc.)

  6. Use a small scooper to make cookie dough balls on baking sheet.

  7. Bake for about 11-13 minutes. 

  8. Let cookies sit on baking sheet for a couple minutes after removing from oven, just to finish baking and to firm up slightly.

  9. Move cookies to cooling rack with spatula. Careful…they will be soft until cooled.

Tip: Please follow all directions exactly!! If you skip steps or swap ingredients then you may or may not like the end result :)
